UCI/UCB/UCSB/UCLA/USC chances & am I on the right track?

My top choice as of right now are:
USC
UCB
UCSB
UCI
UCLA

Let me begin by saying that USC is my reach school, and that I’m aware that my chances to get in are miniscule, but, who knows?

I’m a junior right now so I just want to know if I’m on the right track and what I can do to increase my chances of getting accepted. Let me also acknowledge the fact that I’m not a California resident, so I have to apply as an out of state student to UCs, and I don’t know whether that increases or decreases my chances of getting in, so clarification on that would be great also!

My unweighted is a 3.5 (I had a rough freshman year, got all B's) but I have gone up significantly in my GPA: freshman year it was a 3.0, sophomore a 3.5, and now as a junior I have a 4.0 and I’m pretty sure of the fact that I can maintain it.
I can't really tell you what my weighted is since schools do it differently, but I doubt it's too great.
My UC GPA is a 4.21 (Good thing they don’t count freshman year, huh?)
And I got one C – in Euro, so how does that affect me?

So far I’m top 11% of my class of a little over 800, but that's not counting the junior year GPA so I should move up to around 7% if all goes well this year.

So far I’ve taken 4 APs (2 freshman year, 2 sophomore year), and I have 4 more this year.
On the exams, I’ve gotten 4s in World and Euro, and 5s in Human Geo and Art History. I’m hoping to get all 5s on this year’s exams. (I’m taking Psych, US History, Enviro, and English Language)

The classes I have lined up for senior year are: AP Statistics, AP Calc BC, AP Gov/Econ, AP English Lit, Humanities, Photography, and Russian (duel enrollment)
I’m fluent in 3 languages, and I’m learning 2 more, but I don’t think colleges even look at that?

I took the SAT once, but I didn’t study, so I didn’t have too good of a result – 1980. But I know if I were to study (which I will) and retake it, I can get at least a 2200.
I got a 700 on the World Subject Test, and I’m taking Math Level 2 and US History at the end of this year.
The ACT I’m taking in 2 weeks, and that will be my first time.

In terms of ECs, my freshman year might kill me- because I joined one club and that’s it, but I’ve been pretty consistent with the clubs I did join.
Lately my ECs have been focused on the environment and such, I’ve been in ecology club for 2 year, and I’m vice president for next year. I’m a group leader of one of the teams participating in the CLEO institute- an organization in south Florida that seeks to educate people on environmental issues, and I have tons of volunteer hours from the tropical botanical garden close by. (I think it’s something around 250?) I’m currently working on a project to bring recycling to my school, and I’m starting a beach clean up project.
Also, I’ve been a representative to student council for 2 years, and I’m running for an office position for my senior year.
I also volunteered at a hospital in Ukraine, and not one of those programs that you pay to go to and volunteer, but I was there on a trip with my family for a good portion of the summer so I decided to get some volunteer work done. I’m also working on acquiring what is considered in the US to be “out-dated” medical technology through fundraising/donations to send to that same hospital, because there, that technology is considered pretty modern.
Lastly, I did an internship with a company who plans large scale music festivals, but I don’t really know if that helps me too much. However, I love music and I’m currently learning how to DJ, so I'm hoping I can play that into my essays.
Over summer I have an internship with a marketing firm, and senior year I’m doing an internship with an agency that focuses on research and gathering evidence to prosecute crimes against humanity, primarily in the Middle East. (I want to double major in International Business and International Affairs, with a minor in Global Cultures, so I thought those two internships seemed appropriate)
I’m a member of a few other clubs but I don’t really participate in them too much so I’m not going to go through the trouble of listing them all.
I don’t have any sports though. Will that decrease my chances? I used to play water polo but with school and all, it got way too overwhelming, so I quit.

So yeah, that’s about it, what do you think? I’m leaning more towards the UCs, since I believe that I’m not going to get into USC. If I stick to everything I plan to do, is there a good chance of me getting in or no? What other schools would you suggest applying to? I’d also appreciate advice if you have any to give! Thanks!
USC- Reach. Retake the SAT and it’ll be a high match.
UCB- Reach.
UCLA- Low reach. Retake the SAT and it’s a high match.
Other UCs- Matches.
