my word processor says my essays are less than 1000 words total... but the word counter on the UC site says it's 1008 words, for some strange reason. uhm... should i just ignore it, or try to take off 8 words?

They're not going to stop reading at 1,000 words. Don't worry about it.

Think of their word limits as "guidelines" instead.

8 is fine..

I heard something about how the UC system counts apostrophes and such- so "don't" would be two words...? Don't know if this is true, but that may be the case...

You may be talking about hyphenated words like "tip-top."
