Urgent SAT II Question

Hello everyone. I have an urgent question regarding the SAT II's, and I will really appreciate any responses. Please note that responses will cease to be useful after mid-day tomorrow (Friday, west coast time), as this is a very time-constrained question. The situation, as follows, is somewhat complicated.

Firstly, this post is based on the assumption that there is at least one Subject test date between the October date, and the college regular application date. If that assumption is incorrect, please let me know, and don't read all of the stuff below. Otherwise:

Long Version (Please read if you have time):

My issue is this, I meant to start studying for the SAT II chemistry test sooner, but my very busy schedule prevented me from doing so. I took a course Fall semester which covered many, but not all, of the topics, but I've since forgotten much of it. It is currently Thursday night, I've had one night of studying, and have one more before the test on Saturday. I've taken one actual practice test, after reading through about a quarter of the material in the study-book, and I got a 600. I will likely improve on the test based on a couple of indicators: I did go about taking the practice test very seriously, since I knew I was un-prepared, another night means I will be able to double my study time, and finally, I consistently got 700's on the practices for the math II test (tests were from the same series of test-prep book), but I got a 790 on the actual math II test.

I need to take a science SAT II, because I want to apply to Cornell Engineering, and if I don't take chem now, I'll end up taking physics next year. This would have several advantages (I'm better at it, I enjoy it more, I'd have more time to prepare, I'll have much more background in it with my most recent class being half of the year-long advanced physics course I'll be taking next year, and it is more applicable to my major of choice, which is computer science). The problem is that I want to apply to Stanford early admission (it is my dream-school, and my mother and grandfather went there), and I have to use the October test date to improve my SAT super-score (790 crit reading, 720 math, 630 writing), so I won't be able to take a second subject test before then, and Stanford suggests submitting two subject tests. Since I'm already a fairly weak applicant for them, I really don't want to push my luck by ignoring that suggestion, but if I take the test, I have to send it to them, no matter how badly I do.

I've emailed my college councilor about this, but I wanted to see if I could get some outside opinions as well.

Question:

When applying to Stanford, who suggest that you submit two subject tests, if I submit a math II of 790 and an overall SAT of at least 790 cr, 720 m, 630 w (the writing, and possibly the math, will probably be higher), would also submitting a chemistry test that will likely be between 600 and 700 hurt me more than it will help me?

As a side note, I go to a liberal arts school with a rigorous English course, and could likely do well on the lit test (I found the practice problems on the website to be fairly easy). I haven't studied at all for that test though, and I figure it would be better not to take it cold.

Thank you very much to anyone who replies within about 16 hours.

Part II: I’m considering taking the lit test instead. I’d have a night to study for it, but I read a lot, and I’ve found practice questions to be fairly easy. Any suggestions for studying for the lit test in one night? Is there anything that you absolutely need to know before going into the test cold?
