So I've started to visit some of the colleges I'm interested in but usually I have to visit on a weekend and it seems like the admissions offices are closed (or so my father says)? If I visit a campus and talk to people around etc but don't sign my name or anything saying I'm visiting... does this just not count as visiting (if schools care about that)?

Check the college websites. Many have Saturday tours, and some even have Saturday info sessions.

a lot of places have special open house programs and stuff on the weekend

at colleges that look for demonstrated interest, it's best to leave some official record of visiting. Maybe contact them in advance and say you're visiting on the weekend and ask for visit suggestions, a map, etc?
