So I’m a junior that hasn’t taken any AP courses until next year as a senior, and I’m hoping that taking some community college courses this summer will improve my chances of admission. What type of courses would be the most beneficial? Things that interest me? Things related to my prospective major? Core classes?

Classes that interest you would likely be looked upon best (and often, classes that you’re interested in will be related to your major). I don’t think it matters that they’re core classes—in fact, some of the more interesting ones are often interesting specifically because they aren’t core classes.
Taking CC classes during the summer really serves 2 purposes:
Demonstrates proficiency and capability in a true college setting
Demonstrates a passion to learn (and as a subset of that, an interest in specific fields)
For example, my school doesn’t offer AP Physics C: E&M so I’m taking an E&M course at a local CC during this summer. I’ll be able to take the AP test for it come May as well - you could look into potential classes that will allow you to do well on the AP tests as well.
Hello! You should take the courses that you’re genuinely interested in or is related to your major. Some do say that it’s not recommended to take CC courses that are already offered at your school. If you take the CC course, there isn’t really a need to take the AP test since you will already receive the credit for it if it applies. Note that some courses (like E&M I believe) at some community colleges require prerequisites, so look through those thoroughly.

Generally speaking
- post high school classes (philosophy, anthropology, specialized humanities seminars…)
- post AP classes (calc2 or 3, Spanish 4or 5 -
depending on what your school offers… )
- courses that allow you to accelerate (IE., college algebra after algebra2H so that you can take calculus in the fall)
