Who to choose for recommendation letter for school of education?

Ok, I'm a rising sophomore in college and I'm applying to the school of ed. in my university. I'm interested in going for a degree in elementary education in mathematics

Here are the 2 candidates I have for my last letter of recommendation. I already decided on 2 others to write my first 2 rec letters.

My employer 2 summers ago. I was a volunteer english teacher at a senior center. I feel like this would be good, because she could speak about my teaching ability and my leadership ability. However it was a while ago, and perhaps the admissions officer might want an opinion from someone who has observed my ability more recently. Also maybe she doesn't remember my teaching ability in great detail.

My Chinese teacher last year. She taught me for 2 semesters. I feel like she knows me really well, and I got an A+ from her both semesters. I know she will write me a very positive letter. But 2 things. 1- Chinese isn't relative to my major at all 2- Her english isn't that great

I feel like my Chinese teacher would be able to provide more specific examples since I'm probably more fresh in her memory. But I feel like what my former employer has to say is a lot more relevant.

Thanks a lot in advance
