Why are both a Humanites and STEM LOR better?

I asked before which teachers should I ask for a LOR from, and I learned that i should ask teachers teaching a humanities subject and another one from a STEM subject. I know colleges like to see a student who is strong in various fields, but I am applying as a STEM major and I have always been stronger in math and sciences, so should I still ask for a LOR from my English teacher?

It depends on the college.

See if they have specific answers in an admissions FAQ somewhere on their website.

If you’re going somewhere with ‘tech’ somewhere in the name, they won’t care about your rec from an English teacher. If you’re going for a liberal arts college or an Ivy, they will want to see you’re more rounded. If you’re going for a state flagship, they may only want one LOR.

There’s no one answer. Look at your list and the question may answer itself.

Massachusetts Institute of TECHnology wants both.

Correct. It depends on the college. Very few specify that one needs to be STEM and one needs to be humanities. But for the ones that do, they simply want to gain different perspectives on you. If the college does not specify, feel free to submit 2 STEM recs.
