I’m currently enrolled at a CCC and am majoring in engineering as of now. My dream career is to work as an aerospace engineer. Fall of 2019 and Spring 2020 will be my last semesters at my current CC and would like to transfer to: CSUF, Cal Poly Pomona, CSULB, or UC Irvine. My gpa will be pretty low after this summer at around 3.02 which is a big reason I am considering changing my major in the first place as I am afraid of not getting accepted to any of the schools I have in mind. I would earn a AS-T in physics and math but not a transferable degree in engineering before leaving my CC.
Are your Physics grades good? If so, that makes sense. Changing from engineering takes you out of a very competitive “pool” and some of the schools you list won’t even allow transfers into engineering. I would be more concerned about getting your grades up so you can transfer to one of your target schools.

Engineering is a different school at UCSB and I assume UCI and Cal Poly so you could only change to engineering via internal transfer application. Not sure at CSF. Are you getting any advising from your CC? The TAG process for the UCs is really rule-driven, you need to make sure you get the exact right classes.
Although I would love to attend a UC, I’m mainly considering CSUF, and Cal Poly Pomona due to my gpa. I read that if I apply to a major with an AS-T I am guaranteed acceptance as long as the major at that CSU is not impacted. I have an appointment with a counselor next week and will ask plenty of questions. As far as changing majors while already enrolled at a CSU, is it difficult or fairly easy to do so?

Your main concern shouldn’t be gaming admission to an engineering major, it should be understanding why your gpa isn’t higher and figuring out how to improve. The classes you’ve taken so far will seem easy compared to those as an engineering major.
Are you studying enough (typically 6-10 hours per week outside of class for every class you take)? Are you studying effectively (eg. doing practice problems on your own, doing some work every day rather than just before tests and before assignments are due)? Are you attending office hours to ask questions? Are you working with friends in class to study and quiz each other?
Your CC ought to have a study skills center you can visit. Also there are many websites with study hints, as well as books such as “Make it Stick”
