An essay prompt for most of the colleges I want to apply is "Why do you want to attend this university?"

I have lived in pretty diverse areas, and in multiple countries. In turn, I sorta want to write about how much I like diversity and in turn, I want to study in a diverse environment (which is pretty much 90% of the colleges I want to apply to).

If I say "I want to attend your college b/c it's diverse," to all of my colleges, would it be okay?

I know colleges want specific stuff for the essay, so I could put in statistics of the diversity.

You can use diversity as one of your reasons, though I don’t think statistics would be necessary. The school should, hopefully, know their own diversity stats. Being specific should be more about providing specific examples instead of vague and general examples that could apply to hundreds of colleges.

You should include other points, though. Make it obvious that this school is one of the only schools that offer everything you want in a college.

Instead of trying to make that topic fit these essays, where it’s really not specific to one school, it could be your personal essay on the common app.

“A range of academic interests, personal perspectives, and life experiences adds much to the educational mix. Given your personal background, describe an experience that illustrates what you would bring to the diversity in a college community, or an encounter that demonstrated the importance of diversity to you.”

seems to fit pretty well, just a thought.
