Would you recommend me to take subject tests?

Hello, well the thing is that I am in my senior year, I am an international student living in Mexico and I attend to an international school. I got my SAT scores today 1600. I am planning to apply to University of California Irvine. I know that all the UCs accept either SAT reasoning or SAT subject tests taken in December. Now I am wondering if I should take three sucjects which are Spanish, Math1 and Math 2 ( I am pretty sure that I will get a 800 on spanish, approximately 700 on both math tests). At this point what would be better for my application a really good SAT score or a low SAT score and good Subject test scores.

Hope you can help me out with this and thank you all in advance!

UCs do not accept math 1. You must submit math 2 if you submit a math. UCs do not require subject tests but Irvine is actually one that states two are recommended. You have a dilemma to which there is no easy answer. Your SAT is on the low side and thus retaking would usually be recommended but SAT subject tests could also help, although you should not assume that Irvine will be impressed that someone who lives in Mexico can score high on the Spanish subject test. I would probably lean toward retaking SAT, particularly since that along with GPA will be the most important factors.
