So I know that there's a dance/concert/movie on Sunday night and an activities fair on Monday, but what do we do for the rest of the week until classes start?

Are we supposed to stay at UCLA or should we start living there later in the week?

you don't have to move in until classes, but it's recommended you that weekend before so you can meet people. there arent a whole lot of official events, but 2 others i can think of are your dorms welcome week event, and an all hill night at wooden plaza w/"fun" and games.

just get to know people, hang out. figure out where your classes are and that sort of thing if you don't know where they are yet. wander around campus and familiarize urself with everything. try all the food that you can (you're going to get tired of it, im not going to lie). also buy books if you haven't done that yet! enjoy your newly found independence from the parentals and stay out all night long ;) most people i know look forward to zero week as just a really exciting time before classes begin...

Yeah, zero week owns. If only every quarter had a zero week... It's the only time that you have nothing to worry about, people still on campus, and you can do as you please. Any other day off, everyone's home or studying crazy to make up lost time.
