According to this calculator on the UC website I have about 30 semester units off only my APs from highschool. Do these count towards the 60 units I need to apply to transfer?

See the doc at http://admission.universityofcalifornia.edu/counselors/files/ap-satisfy-admission-and-igetc-req.pdf That is for 2014, I can’t find a later one, but I doubt they’ve changed the rules.
If you have 30 semester units from AP things may be better than you know! Not only will you be able to enter UC after 1 year but to my understanding you will be able to spend 3 years at UC if you want.
You may want to confirm this with a UC counselor when they visit your CC
