Well to state the obvious, your primary career option is to work with ERP systems. Programming and/or administrating them, although roles such as business analyst and tester/quality assurance are also possible. You might work for a company supporting their systems, likely implementations of 3rd party systems (e.g., Oracle, etc.). Or you might work for the 3rd party company itself (again, like a Oracle), but they tend to look for folks who already have experience with their systems. You could also work for a consulting company that helps other companies install and support ERPs (often a good way to get experience).
Is it a good degree? You can look up labor statistics if you want that sort of detail. I assume these degrees get you some basic database and programming skills, if so you could do a variety of roles with that even if not on an ERP. Companies with ERPs tend to be those selling products rather than services. Think retailers/wholesalers rather than banking/insurance. So that might limit you a bit, but should still be plenty of options.
