UCI is very GPA focused. I think it is a Reach.

The average GPA ranges for the 25th to 75th percentiles as reported by the University of California are

It seems like your estimate for the 3.40 - 3.79 range are possible for most of the schools, but it is unlikely or impossible that UCSB would accept 13% of students with that GPA range and UCI would accept 16% based on the average GPA ranges reported. A lot of the numbers you have posted in terms of statistics from admitted students at UC Davis, UC Irvine, and UC Santa Barbara appear to be incorrect based on data reported from the university system.
Also, since number of applicants vary by year and schools vary in how many students they can accept each year - its generally not a good idea to chance something based on GPA’s or SAT scores of those accepted.
The data listed is from the UC info center website and this is from 2015 since 2016 data was not available, but if you look at the historic GPA data, it is very close. I just put in an easier form to read.
