Does anyone know if schools like Yale allow you to change majors once you get in? How easy is it to do so?

Yes. Most incoming freshmen do not have declared majors, only tentative ones at best. And it is very very easy to do so since 99.99% of colleges don't make you choose a major the first year, and a majority don't even allow you to do so until the second anyways.

But some majors are very difficult to change into.

Changing your major within a college (e.g. from philosophy to politics within the liberal arts college) should not be an issue. Changing colleges within a university (e.g. physics to engineering, or economics to business) can be tricky, but you don't need to worry about that for Yale.

The major you put down on your app is by no means definite. Most schools (including Yale, if I'm not mistaken) don't require you to officially declare your major until the end of sophomore year. Schools understand that you'll change your mind.
