The Ivy League schools I am looking to apply to are Princeton, Yale, UPenn, and Brown University. My SAT score is in the range that they are all looking for.

I am taking the SAT II's in October for the first (and only) time. I am definitely taking Math II. My question is whether I should take Math I or Chemistry?

I know Chemistry-Math II would be a better combination, but the thing is I am planning to major in Mathematics. Also, if I had to predict, I would say I can get a perfect score on Math I, while on Chemistry I would say about a 750-780 (based on practice tests).

For these Ivy League schools, do you think I would be smarter to take Chemistry or Math I? Thanks!

If I understand you correctly you are going to take math 2 but you also want to know whether you should choose as your second test chemistry or math 1. The answer to that is easy. Those ivy league colleges require two subject tests in different subjects. Submitting math 2 and math 1 would count as only one. Thus, chemistry is definitely the better choice.

Don’t take both Math I and Math II, even if colleges don’t require subject tests from two different fields. You should take Math II and Chemistry.

You should take Math II and Chemistry. When you do well on Math II you will show colleges that you are good at math, so there’s no need to show them again what they already know. Taking Chemistry and doing well on that too shows that you are good at more than one subject.

Chemistry is probably the most strictly math-intensive of any commonly offered science class, so it wouldn’t show diversity as well as taking, say, Literature or Korean. That said, it’d do so better than taking Math I.
