I am assisting my daughter to submit college apps and she is already overwhelmed. for CMU, through common app, I have submitted the main app and payment but my daughter busy submitting apps for other school and she wont be able to finish essays under “writing supplement” section. Is it okay if we submit them past deadline a day or two?
Technically no - it will be considered late. Common App should still allow you to submit, but then it’s up to the admissions office to accept the late submission, or consider the application late or incomplete. It’ll be best to have your daughter submit the essays asap (since CMU’s deadline was last night) and reach out to the AO if necessary.
With a highly competitive school like CMU it’s best to submit everything on time. Why hand them a reason to reject your application?

Agree…unless otherwise noted every part of the application should be submitted on or before the deadline.
I assume your D missed the deadline which was yesterday at 11:59pm?
It’s possible CMU will not consider her app with late essays, and even if they do, it’s likely submitting late essays will hurt her application. Will she be submitting the three required essays today? Things may be more clear if and when she receives portal setup info.
If you’re only a day or so past the deadlines it’s worth it to apply. But I’d adjust your expectations. I think late applications are like late assignments. Colleges might take them but it can affect the outcome. Your daughter should submit it and hope for the best.
Does your daughter have a safety school (one she’s sure to be accepted to, is affordable without more than the federal student loans, and that she’d be happy to attend)? It seems like your family is overloaded and it’s causing a lot of stress (missing deadlines for applications, score submission, and scholarship apps). If your daughter has a true safety then it’s okay to take a breath and relax a little. That might mean targeting fewer schools so your daughter can focus her full attention on those applications. If she doesn’t have a safety lined up then I’d suggest making that a priority.
CMU is a very demanding school with a reputation for being stressful and not very student friendly. If your daughter is overwhelmed with application essays maybe it is not the school for her.
This probably sounds a bit harsh, but you may want to consider if CMU is a good fit for your daughter. My son applied to CMU for MechE, and in the extremely unlikely event they accept him he may still go to another school because it is such a grind at the Nerd Farm. It is all about the fit.
