Your grades and scores certainly fall within their parameters. Perhaps consider honing in on one extracurricular area and becoming a leader. You play volleyball…can you coach younger players? I see that you want to major in environmental engineering but I don’t see any extracurriculars in that area (unsure of specificity of Science Alliance). Since you live in CA what about a service trip through Sierra Club this coming summer? Lots of opportunities in CA. Just my two cents. Best of luck to you!!

Your GPA is on the low side for Engineering at most of the UC’s (which are very GPA focused) but your SAT scores are on target. If you are interested in Environmental Engineering, it would be advantagous for you as stated by @mrshost ^^^^, to have one EC related to your major.

For SLO your stats are within range and Environmental Engineering has about a 22% projected acceptance rate.

Not all UC’s will have Environmental Engineering as a major but you will also find it under Civil Engineering as an area specific emphasis.

If you can get your GPA up above a 4.0 by year’s end, your chances at the Mid-UC’s would be better.

I would also target other CSU’s beside SLO: Cal Poly Pomona, SDSU, CSULB, SJSU as possible Match and Safety schools.

You select under view: Freshman admits
Under Campus: You select which UC campus
Under Applicant characteristics: Select HS GPA (which is the UC capped weighted GPA)

I just looked up all the UC GPA ranges for each campus and put them into a table. This table posted by @ucbalumnus which shows the Historical Freshman admits by UC GPA which I copied by unable to format properly.
