I a currently taking a gap year working as an English teacher in Odessa, however I am planning on applying to college for the fall semester.
I have a mediocre GPA, although I've been told that my gap year makes my school grades less significant, however I have a 2160 SAT score, with writing at 670 being my lowest score. Sadly, it hasn't changed much, I'm absolutely terrible at writing essays. And frankly speaking I'm not sure that my college application essay is going to be good enough.
I have been told that there are schools which can accept you and grant financial aid mostly on the basis of a good SAT score, but I don't know what those colleges are. Could you possibly give me some names of places that look at the numbers more than at the person behind them?

I know that Coastal Carolina doesn’t look at essays, although looking only at your SAT score it seems that it’s a safety school for you. I don’t really know about any other schools, though.

If you have a 670 in writing I am sure you can write a decent essay. Avoid LACs (specifically UChicago) because they value the essay much more. That being said with the assumption that your essay will at least be decent almost any public university would be a good option (they focus on stats but assume you will have at least a decent essay).

I think it is highly unusual to not want to write an essay. That being said, the CSUs require no essay at all and highly value a strong SAT score. CSU SLO is pretty good and is on par with the mid-level UCs.

If you can afford any Canadian U not called UBC (UBC is the only Canadian school which, to my knowledge, asks an essay of all applicants) and you apply at those schools for majors that do not require essays, then a Canadian U will be a good choice.
