I got deferred ED from an ivy, so I recently sent them kind of an update of what I've been doing this year. However, my guidance counselor wants me to start sending them as many rec letters as I can think of. While I can somewhat see the value in sending one maybe two letters, I think it is way overkill and somewhat annoying/innappropriate to send in like 5 more letters. I just wanted to get everyone's opinion about it because I think he is crazy and have been quoted as saying if not sending another letter from ____ keeps me out I don't want to go there.

Yeah, that's overkill. Definitely keep them posted on any noteworthy accomplishments, and send supplemental materials if you think they'll help - one extra essay, one extra rec. But choose things that give a fresh perspective, or highlight things that may not have been clear in your original application. Piling on the letters will annoy them and probably won't give that much additional support.
