Dilemma

My dilemma is that my SAT score does not reflect my interests. The first time I took it I got:
Math: 680
Reading: 790
Writing: 720 (11 Essay)

The second time I was hoping to bring my math up, but instead it was overall worse:
Math: 650
Reading: 690
Writing: 790 (10 Essay)

So my composite is:
Math: 680
Reading: 790
Writing: 790 (10 essay, you probably cant superscore the essay)

What sucks is that I want to go into science or engineering. Obviously my math score sucks for someone who prefers that to any humanities. I saw that 680 is the 25% at Rice, and I am sure that that 25 are mostly non-science and non-engineering students

I think part of the problem may be that I took Stats AP (got a 5 on the test) the year before the SAT, so I forgot alot of algebra and geometry. I am in pre-cal this year, and calculus AP next year.

Will this screw my chances of getting into the science or engineering program at Rice, or any other prestigious school for that matter? Would doing well on the SAT II lvl 2 math test make up for it? Thanks.
