English Lit and Biochem/ChemE double major transferring

Hello all, and good luck this semester as fall is here for most students!

I have a bit of a problem I could do with clarification with. I plan to transfer to a UC/CSU from a California CC with a double major in English Lit and either biochem or chemical engineering (although I'm leaning towards the latter since I'm note interested in the industry part than research/academic part of chemistry) I have always harbored a love for both of these subjects, a weird combination but not unheard of!

Basically, my situation:
-chose a while ago to major in English, not Chem, follow your dreams etc, I'd love to be a teacher (esl abroad or Eng lit in us)
-I have everything ready to transfer to UCs or CSUs in Fall 2015 as an English major
-In order to transfer as a biochem/chemE major, I would not be done with the required math/chem/phys/misc engr+eltn courses that 4-yr universities require as lower-division major req's until ~Spring 2016

How would I even go about doing this? Do I transfer now as an English major, then apply to double major and do all the chem coursework (incl. Lower division courses) at my uni? This would cost a lot more than a CC and want to avoid it for that reason.

So is there any way to do as much coursework at my CC as possible to transfer as this double major?

The main concern is that these majors are so unrelated that coursework doesn't coincide and uni's have a cap for the amount of units they accept to transfer, which essentially prevents me from completing and transferring all the necessary coursework for BOTH majors. (right?)

Not to mention the complications of having to apply to two different colleges at my uni of choice (science, letters).

Please shed a little light on this for me, I'm very lost and confused at the moment.

Just my 2c
I think you should transfer with English major and once you are in the 4 year college, change major or make it double major.
