During my application for FAFSA and Cal Grant, I listed the colleges of my choice that I would live on campus. If I were to suddenly not apply for college housing, and choose to live off campus, what would happen? Will I need to contact or inform someone? Would the financial aid be adjusted accordingly?

CalGrant A only covers tuition; housing doesn’t affect it. If your EFC is low enough, UCM may also give you a university grant to help with housing.
If you’re living off campus, you should change the FAFSA to “living off campus.” UC’s have different costs of attendance for off campus, which does affect how much aid you get. Difference should be like ~$1000 dollars I think.
