Foreign language third year...online????

I'm a high school junior dealing with senior scheduling for next year. I originally signed up for five AP courses and Latin 3 Honors. I am not looking to drop any AP classes, so I talked tot my counselor about switching Latin 3 for Art 2. (Nothing to do with my intended career/major - I just enjoy it) She strongly urges me to keep Latin as most colleges want at least three years of a language.

I have been busy this year with three AP courses and have not reviewed my Latin material once. My fear is that the class at my school will be too fast-paced for me as I would like the time to review Latin I/II when necessary. Students that hadn't had a gap year would be ahead of me because of that.

So, would colleges care if I took Latin 3 with an online accredited program instead of with my high school? My GPA is somewhere around a 99.95 (weighted) and my first SAT scores were a 2050 (without any prep - I can probably bring them up a bit). As of right now, TCNJ is my safety school, NYU is my target, and Yale is my reach - if that changes things.
