Freshman, 2 credits away from my degree

I'm currently at a CC. I am taking 14 credits this semester (Statistics - 4, Intro to Sociology - 3, Speech & Communication - 3, and Astronomy - 4). Next semester I plan to take 16 (Intro to Psychology - 3, Intro to Social Psychology - 3, Cultural Anthropology - 3, English Composition 102 - 3, and French 101 - 4). I was looking at my credits and because of AP exams (31 credits), I will have a total of 58 credits by the end of the spring semester (the reason I won't have 61 is because I got AP credit for that English class, but have to take it to satisfy USC's writing requirement).

I was looking at my associate degree requirements, and I only need 60 credits to get it. Should I take an additional class (thinking Intro to Jazz - 3 or something else music-related) for a total of 19 credits just to get that degree by the end of this year?

Will it look good on a transfer application if I have my associate's done in my first year of college? Or do they not really care about that?
