How are summer activities validated?

Currently, I am going into my senior year and my summer has been pretty bland. It is extremely hard to find an internship here and I have contacted many people who have all responded with "I have no need for an intern at this moment." so instead, I am trying to still be productive by doing other things.

Like for example, I am currently self studying programming using MIT Opencourseware
But how will schools be able to validate that I am being truthful and honest?

In addition, I am an intern at my local Martial Arts Studio and how do I show/prove I did that?

Thank you!

They generally don’t ask for proof. But if you are taking a MOOC and there is an opportunity to earn some kind of certificate, then by all means do that, you can list that (by the way, when listing those on the Common App, the only place my kid found for them 2 years ago was “additional information”). They aren’t high school classes or college classes for credit… now the Common App changed last year, so maybe there is a spot now. But that is what my kid had to do two admissions cycles ago.
