Do students ever use bikes/skateboards/hover-boards etc. to get around campus? Is there an easy way to lock these things up if you use them?

Yes, bikes are popular on the UT campus but, so is theft unfortunately- probably like any other campus.
If you have a very expensive bike- think twice about taking it to campus. A cheap junker- less likely to be taken can work just as well.
Also read that if you have to leave it outside make sure you use good locks: u-lock & chain- that helps.
Judging from what I’ve seen in person and the campus snapchat, only 1 guy uses a hoverboard. A fair amount of people bike, but usually from campus to their apartment and back, not from building to building. I can probably count the total amount of people I’ve seen with longboards and razor scooters with my fingers. Nobody skateboards.
You can lock up bikes, everything else you have to take with you always.
Bring, or better yet, build your unicycle and join the movement.
Sons bike was locked three different ways. It lasted 2 days. Every bike on the rack was stolen at the same time. Walking is the way to go.
During my time at UT, most people simply walked from building to building. If you need to get to the other side of campus, you can simply take the shuttles.
