Not that I'm actually deciding to do it but how hard is it to transfer from say arts and science into engineering? How long would it take to complete the requirement courses (what are they and are they hard - to complete and get a good grade from)? Would I need to stay an extra year to fulfill the requirements? Is there a way to minimize that time?

Depends on what you have taken so far.
I imagine you can look up requirements on the college’s website someplace. Many underclass engineering college requirements are general foundation math and science courses that a CAS prospective science major could just as well have taken, but whether you did I don’t know.

My experience, long ago, was physical science courses in CAS were harder than engineering courses, actually. YMMV, and things may have changed. (but physics hasn’t gotten any easier, I suspect).
