I'm applying for colleges soon, and I want to do something in the environmental field. There's so many different ways to approach natural resources and environmental field so I don't know what I'd do best.

Would it be too difficult to declare environmental engineering as a major and maybe minor in natural resources or something similar? I don't want to so much coursework that I have zero time for anything else. Obviously engineering alone is going to be difficult, but I still want time on the weekends or weekday evenings to get involved with other activities.

Some people can manage a double major in two technical fields, one of which is an engineering major. Others won’t even be able to pass the engineering coursework alone within the given timeframe (they might need an extra year).

Usually after about 1 year you will be able to figure out which kind of person you are. A lot of schools don’t allow you to declare a minor before that anyway, for that reason.

It will also highly depend upon the particular University you attend, and which courses are required for the major and the minor. Also, if you start college with a lot of AP credits, and/or are willing to go for additional semesters.

To get an idea, pick a particular University, perhaps your state flagship. Go to the web site and look at the requirements and suggested schedule for the major. See how much room there is for electives, and look at the requirements for the minor, and check to see how many credit hours would be required to do both.
