However, I am lacking somewhat in EC's. I did mathcounts in 8th grade? ;-)
4 years XC/Track, 3 years Varsity. (This has taken up such a large chunk of my time, it's insane)
-Any suggestions for things I could do between now and fall?

So, i'm looking for possible schools to apply to with a major in engineering (electrical), however, with a possibly double major in business to open up more avenues for my future.

I know one of the big UC's (Berkeley or UCLA) has great electrical engineering. Haas (@ Berkeley) is famous for business. Both schools will be a match for you.

I could tell you some good business schools, but not so familiar w/ the engineering.

I have somewhat similar stats to you & the schools I am most likely to apply to are (for business/econ):

Reach:
University of Pennsylvania – Wharton
Princeton University
Stanford University
Columbia University

Moderate Reach:
NYU – Stern
Northwestern University
University of Chicago

Match:
University of California-Berkeley
University of California-Los Angeles
Carnegie Mellon University
University of Michigan-Ann Arbor (Ross)

Safe Match:
University of Wisconsin – Madison
University of California – San Diego

Hope that helps.

i think cal has a double major program for business and engineering

n00b, you are gonna get pwn3d!

damn dude nice test scores. if your gpa correlated with those, you'd be pretty well set.
