Both will give you a great education.

UCSD has more prestige in the economics major, for what that's worth.

I would choose based on other factors:
Davis has an inland, farming, small-town college environment. Davis was originally founded as Berkeley's agricultural school. It's strength in veterinary sciences and biology is what it's mainly known for. Davis also is the only UC (outside of Pac-10 members Berkeley and UCLA) to have a football team.
If you're from SoCal and want to go away to school, Davis can provide this retreat.

UCSD is in La Jolla and has the nice Socal beach environment. It will be more academically intense, IMO, than Davis. UCSD also has residential colleges which makes it a unique environment. UCSD's strength is in its biology and bioengineering departments. From what I've heard, UCSD can be kind of boring...less social activities on campus.

Please visit and see what campus environment you "click" with. The important thing is to be in an environment that allows you to focus and have fun...you'll be more successful when you're happy.

You won't go wrong with either choice. Both schools will provide you the same job opportunities. However, if you want to settle in the San Diego area, more SD based companies will recruit from UCSD. Likewise, more Norcal companies will recruit from Davis. But, you'll be able to find similar jobs with similar pay no matter where you go.
