Hello, I am currently a junior (class of 2017) and plan on taking the SAT this school year and eventually applying to UF. Will UF accept the new sat test scores? And if so, what would we be a “good score” on the new test to increase my future chances of being admitted?

UF will accept the new (and old) test scores. You can still take the old test, but in March, they will start offering the “new” test. Since that’s the first time they will be offering the “new” test, I highly recommend that you plan on taking it a 2nd time (like in June, or even in the fall of 2016), in case they have issues with it in March.
If you don’t like the new format (or are concerned about it), you can still take the old SAT and submit that score to UF. (Taking the ACT is also an option)
No one really knows what would be a good score. It’s moving back to a 1600 point scale. If I had to guess, for UF, you likely need to score over 1200 if not closer to 1300, but that’s just a guess.
