Okay, I was just informed today that my schedule is completely messed up. I plan on majoring in Economics or Political Science in college, but I want to go to a top tier university. Which schedule would look better?

1:
Personal Finance
Orchestra/Chorus
AP Spanish
AP English Literature and Composition
AP Calculus AB
AP European History
Physics

2:

Economics
Orchestra/Chorus
AP Spanish
AP English Lit
AP Calc
AP Euro
AP US Government and Politics
Forensic Science/Anatomy (half years)

Basically, it comes down to physics. Would it better to take AP Gov and Economics because they fit better with my major or would it be better to take physics because most top tier universities want to see one year of the major subjects? I don't know how to proceed.

What grade are you going to be in? If you’re not going to be a senior, could you take physics next year? I’d recommend the first schedule because they want you to have physics. It’s not very important (for college admissions, anyway) to take classes related to your intended major.

I think you’re fine either way. You have one class in each of English, science, math, social science, and foreign language. After that, do whatever appeals to you, not because colleges will think it looks good.

Take physics. Even though you’re not going into a science related major, top universities want to see bio, chem, and physics on your transcript.

Even if I did like AP Environmental in lieu of physics, would it still be weaker? (In that case, I’d be taking 6 AP’s instead of 4)

Some schools won’t even look at your app if you haven’t taken physics (unless your school doesn’t offer it). If you can’t guarantee being able to take it senior year, take physics. AP Enviro is considered an APlite it won’t make up for physics.

Contact the schools you will be applying to and see if they want physics.
