I was accepted to both SDSU and UC Santa Cruz for Pre-Economics and I really think SDSU would be a lot more enjoyable, but my mum is really fixed on sending me to Santa Cruz. She's basically telling me that a degree from SDSU is pretty much worthless and her friends' children that went there ended up without jobs. Also, she shows me all of the online rankings of the two schools and I think UCSC is like #87 and SDSU is like #152, and she stresses that with such a big difference in rankings I'd be throwing away my future by going to SDSU. So basically what I'm asking is is there some merit to what my mum is saying, that a degree from a UC school is a lot more valuable, or does SDSU offer just as many opportunities?

A degree from a UC is not more valuable than a Cal State unless you plan on attending Grad school where a UC education maybe more helpful. I really do not know much about the Pre-Economics major at SDSU or UCSC, but my S chose SDSU over UCR for Computer Science. As long as you do well at either school and take advantage of internships and all possible resources at each school, you should be fine at SDSU. Remind your Mom that you will be the one going to the school for 4 years, not her…

Santa Cruz is NOT a business school no matter what the rankings say. Trust me, I hire students all the time. Santa Cruz is never on my recruiting list. If you were a bio or science major then I would agree with Mom.
