Switching majors after applying

If you applied to Santa Clara university in business and then decide to switch to engineering, how possible/ difficult is it to switch?

It depends on the school. I’d contact the school right away. It is often difficult to switch into engineering.

Even if there is no administrative barrier to switching, you need to start with the engineering course work from your first semester to graduate on time in engineering. Because you indicated an interest in majoring in business, pre-frosh advising may suggest that you choose courses to major in business, which could leave you behind for engineering if you follow such advice. You need to look up the course plan for your intended engineering major and follow it (make adjustments in placement if you have AP credit that allows skipping an introductory course, and you try that course’s old final exam to ensure that you know its content well).
