Teacher's Assistant Senior Year?

I’m currently a junior taking AP French, hence there is no official French class for me to take senior year. My counselor said the only real option would be for me to become a teacher’s assistant for next year’s AP French class with some extra work on the side. I’m hoping to major in either earth science or physics, so I don’t necessarily need to continue taking a foreign language. But I do believe it would be extremely beneficial in the job market to be bilingual. Would it be good to take this position, or would I be better off taking a second science class?

In my opinion (which may be wrong), I’d go for the science. When you’re applying to colleges, they’ll see you took AP french, and assume you were done. You want to major in science, so you should probably take a science (yes, the TA position would help, but I think the science is better)

However, if you really want to do AP French and are going to have to basically be self-studying in by being TA, why don’t you just take the exam through self-study and take the science class?
