If I have more than 105 transferable courses what will UCs accept. For example I have 114 quarter units including my general ed and biology courses needed to transfer. What classes will they not account for once I am admitted?
Think of the 70 sem/105 qtr as virtual units. They’re just floating units not attached to any particular courses. You get “subject” credit for all the courses that are transferable no matter if it is over 105 qtr.
All your courses count.
You should look at it instead as, I now need (180 - 105) = 75 quarter units from UCx to graduate.

SO if I take more classes to raise my GPA, that will be the GPA that they see? Right now I have a 3.6 and planning on to take 114 units. I have finished my GEs already, but if I take 2 more GE classes on top of the required ones I finshed, they would count towards my GPA that college officials see? And will that GPA carry over even though I would have more credits than they accept? Sorry if this is repetitive I am a little confused. I just wanna boost my GPA before entering a four year UC, but don’t wanna take the additional classes if they don’t even count.

Those extra classes would count towards your GPA.
At your point, each incremental class would add only .01 to your GPA. So say for example your coursework so far in CCC consisted of 17 As and 11 Bs, a 3.61 GPA. Taking 2 extra classes and making it 19 As and 11 Bs puts your GPA at 3.63.
All UC-transferable courses, no matter the unit count, are counted toward the GPA - except for final winter/spring terms, which are not calculated. So the calculation ends when you finish the fall term when you submit the application.
