Your GPA is going to make UW a reach. Check out the entering class profile on their website: https://admit.washington.edu/apply/freshman/by-the-numbers/ Middle 50% GPA for WA residents is 3.86-3.92 Your SAT is a hair above median, but higher would be helpful since your GPA is a weakness. Hopefully the improving trend will help but padding your qualifications a bit on the testing front wouldn’t be a bad idea. And let’s face it, if you want to go to med school, the MCAT is going to be important, so sharpening your standardized test-taking skills won’t be a waste of effort.
What would your budget look like for going out of state? The U of California system does not count freshman grades in their UC GPA calculation. That would be a big advantage for you. If you’re interested, you can use this calculator to determine your UC GPA: https://rogerhub.com/gpa-calculator-uc/ (for OOS, only AP classes count for weighting, not honors - but you should have the max 8 semesters of weighting with just AP’s, anyway.) However, UC’s are very expensive for non-residents (except for Merced where you could get the WUE reciprocity rate).
In the northern direction, I believe UBC disregards freshman grades as well. But there are reports of Canada restricting US admits right now - not sure what will be happening next year.
I (white male, in-state) had very similar stats to you and was waitlisted (yet to hear back about that). My GPA was 3.39, SAT 1380. I did not, however, have ECs that could even touch yours, and didn’t take APs until senior year. I would focus on writing an EXCEPTIONAL essay to get in. I would expect in-state acceptance to go down next year as well, this years class will be much, much larger than usual
