So I've been accepted into the Vandy school of Engineering, which is really amazing, but now I have my doubts as to whether or not I want to definitely be an engineer--it's pretty much 50/50.

My question is: how easy is it to transfer between schools, say, to transfer from the School of Engineering to the Liberal Arts School? Because at this point, that's going to be the deciding factor as to whether or not I enroll for next year, since now I'm not quite sure about my interest in engineering.

S was admitted to Engineering and knew within the first half of the fall semester that he was going to transfer to A&S. It is not difficult to transfer, but I do believe they have you wait until the end of your freshman year to officially process the paperwork (at least they did then). Waiting to do the paperwork won't affect your course selection for spring semester though.

You don't have to be an engineer to graduate from Vandy school of Engineering. Many of my classmates when on to law, med or graduate school and did very well with an bachelor of engineering degrees from Vanderbilt. What is neat about the Engineering school is that many of the core and elective classes are in A&S.
