I made a 1770 on the SAT. (I know, not the greatest..)
I have a 4.3 GPA
I have EXCELLENT recs
Taken all AP courses throughout high school and taken and multiple tests
Gotten my essays and short answers critiqued by many, and thankfully, they have all been highly regarded.
Exremely involved with volunteering organizations in my community (NHS, United Way, Youth in Philanthropy, Youth in Advisory...)
Extremely involved in extra curriculurs (Theatre, student council member, student council VP one year, and I am most involved in my school newspaper.)

So, what do you think my chances are? Will my other stats outweigh the SAT score? Is it the SAT score just too low?

You NEED to get your SAT score up. It’s a good score but for NYU, it’s not gonna cut it. That school is so competitive, you’re gonna need to get it to at least 1900 to have a decent shot, and if you could get it up to like 2150 i’d almost say you’re guaranteed to get in. I know that that’s a huge difference but it’s possible. Just take the SAT again and practice a lot beforehand and maybe take a prep class for it. Good luck!!

What were your AP scores? And which AP’s? What was your unweighted GPA?
It’ll take a lot to make up for that low of an SAT score, especially for NYU.
