I am planning on taking 3 subject tests in October (Math2c, His., Lit.) and hope to do well...but one school that I am interested in requires math (I, II) and a science.

If I decide not to take a science test will my application be flat out rejected, or will the admissions office have mercy and accept my other two tests?

It depends on what school you're applying to. Some require a science, most don't care. You should do some research on the schools you're applying to, because as it is already, 3 subject tests usually show a downward slope in scores.
