Hi I am applying for college as a mechanical engineering major. I already applied to Pomona, Long Beach, Fullerton, and SDSU. I have a 2.89 GPA and 1360/1600 SAT. I only want to apply to one or MAYBE two more schools. Should I apply to Northridge, Fresno, Cal State LA, or SJSU?
Looks like your CSU eligibility index is 3672 (= 2.89 * 800 + 1360).
SJSU mechanical engineering has had higher thresholds than that for the last three admission cycles, so SJSU would be a reach. See http://www.sjsu.edu/admissions/impaction/ .
Unfortunately, other impacted CSUs do not publish past thresholds. According to http://www.calstate.edu/sas/impactionsearch/ , all of CSUFresno, CSUN, CSULA are impacted at the campus level, and CSUFresno is impacted for all majors as well (CSUN and CSULA are impacted for some majors, but not engineering majors). If you are in the local area for CSUN or CSULA, you will be admitted at baseline CSU eligibility (>= 2900).
All the schools you have applied are Reaches based on your EI. Apply to one to two non-impacted campuses as suggested by @NCalRent or you may not have any acceptances come Spring.

So for engineering should I apply to CSULA or Northridge
If affordable, I would apply to both. If CSUN is your local in-service area Cal State then you should be fine. If not, it has been heavily impacted these past few years, so you might not get an acceptance. CSULA would be a definite safety school.
I live in Anaheim. Should I still apply to Northridge?
CSU Fullerton will be your local in-service area Cal State, so you might have a better chance there since you are local. I would apply to both if possible and not cost prohibitive. If not, CSUN I think has a better Engineering department than LA.
