Do some schools just look at your ACT English and math scores, like how some schools only look at your sat reading and math scores?

Most consider composite and section scores but a large number of those consider the English and math to be the more important section scores. There are some that limit the scores they actually use such as Rose Hulman which uses only the English and math section scores and ignores the rest and Gtech which uses only math, English and the combine English/writing score.

Does anybody know more schools that only use or weigh strongly the English and Math section on the ACT because my composite is 27 (30E33M23R21S) 10 essay

Depends on your major as well. It’s hard to tell.

Im majoring in mathematics and also have a 750 on math 2 and a 730 on math 1.

they almost always look at composite for ACT
