I wanted to apply to UT's business school and do something along the lines of finance, and was wondering if a large public school like UT would take into account if I had started my own business (www.eskaper.com) ...please let me know, thanks.

Definitely, apps are individually read.

Would you think I had a shot at getting in with a low gpa (3.0), good SAT's (720 math, 630 verbal) and have taken 25+ credits at the University of Vermont over the past few years?

I hate to say it, but no, probably not. I know someone who tried to transfer as a junior into UT last year. She had over a 3.0 from Tulane and Rice (semester that she was out of NO because of Katrina), had been top 10% from a TX high school with a 1380 SAT (accepted into UT out of hs), and she was trying to transfer into Natural Sciences (easier than business). She was not accepted so is staying at Tulane. Sorry.

I'm not transferring though, I've taken all those credits throughout high school through a special program (15 kids in Vermont accepted). Does that change my chances any?

The problem is the low GPA, which probably means lower class rank, and you are out of state. For instate people, the way they fill the business school freshman class is by starting at 1% then going down til they fill 75% (this usually means top 3% or so, then they fill the last 25% using more holistic measures, but if you look up the statistics, the average class rank of the incoming fresh class is 2.3%. You should certainly try, you will never know if you don't apply. :)

Very true, I'll be applying fairly soon. Thanks for all the feedback!
