More stats, math, and math-related econ classes?

do firms and i-banks actually care what classes you take? im a econ major and i have the choice to take just econ or multivariable calculus required econ. will i be a more desirable candidate for employment if i also minor in stats and take more upper division courses? or will it not matter if i still have a high gpa?

For the more quantitative divisions, you obviously want to demonstrate a reasonable degree of mathematical aptitude. Taking math track econ is a good way to do this. That said, I don't think you need to go so far as minoring in stats. Honestly, all you really need to know for the class you're thinking about taking are partial derivatives and Lagrange multipliers, both of which are pretty easy.

in addition to the knowledge i will gain by minoring in stats, will it look more impressive than just econ major?

Well sure you'd look marginally better, but I don't think it would make much of a difference.
