I am planning on transferring to a four year institution from my community college next fall. I am a very high-achieving non-traditional student (I'm 28 and was out of school for a long time) and I never took the SAT II's. Should I take them before applying to schools?

depends what schools u're applying to. go on their websites and check what the application requires. however if it does not require them then u shouldn't bother.

Also keep in mind that some schools do not require SAT subject tests if you took the ACT,

You need to check each college to which you intend to apply to determine if you need them -- you can usually find that on line at the college's site and look for what is required for admission of transfer students. As to incoming freshman, majority of colleges neither require nor use SAT IIs for admission even for freshman. However, most of the high ranks do. Nevertheless, even for those the rules vary for a transfer student particularly if you are trying to transfer into junior year -- a number that require IIs for freshman may not require them for transfer students (they in fact may not require any tests for a transfer student or only the SAT; they rely mainly on college grades to determine admission; for example Yale generally requires IIs for freshman but for transfer students you need only the SAT or ACT) . You should not take the IIs unless they are actually needed for admission as a transfer student to the colleges to which you intend to apply.

A place to start is here: Compass: Admissions Requirements
The site provides a list of colleges that require, recommend or consider IIs for admission of freshman. If the colleges you are applying to are not on the list at all then you do not need IIs. If they are on the list, you then still need to go to each college's site and see what is actually required for transfer students.
