I have gluten intolerant/not celiac friend who inhales rice krispie treats that I make without issue…that’s why I suggested…YMMV

Yeah, people that are just sensitive are probably fine with the small amounts that are in some foods. If you have CD, you need to read the labels and consider that there is a likelihood of cross contamination for any food that is not labeled GF (and some that are).
I make everything exactly the same as I would a gluten desert, but with Caputo flour- it’s a wheat flour with the gluten removed and it comes from Italy, where they really do gluten free right. I have celiac but I don’t wan’t meh gluten free creations- I want things that just taste normal.
Interesting about the Caputo flour, I’ve never heard of that.
I don’t have celiac, but I have a VERY strong reaction to gluten. Yesterday I visited cousins, and of course told them I had to eat gf, as well as emphasizing how serious it is (last year I had to have surgery to repair the hernia caused by severe vomiting after eating gluten). Well . . . My cousin brought out dessert and said “I only put a tablespoon of flour in it, that’s fine, right?” And then said “I wasn’t going to tell you”.
I love these cousons, but man, my paranoia when eating at someone’s house just increased drastically!!

We make a wonderful cassoulet recipe. When we had a GF guest, I used GF flour even though the huge recipe has “only 1T” flour…. she was really appreciative, had seconds.

I was tested for the gene, and don’t have it. By the time I saw a gastroenterologist I had been gf for months and so wasn’t able to have a blood test. But I have a similar reaction/symptoms as someone with celiac.

I’m negative but have the gene, one daughter diagnosed at 7 with a biopsy. Another daughter tested positive on the first blood test, negative with the biopsy. Her symptoms were pretty bad, so they did another blood test that took a couple of weeks, positive. She eats very clean, not a lot of bread products, so maybe damage was minimal? She’s much better now. My sister got a biopsy when she was eating gf so it might not have been negative (she also has the gene). There is a lot on my moms side (grandparents first generation from Ireland).
My wife and her sibs are all gluten-sensitive and various cousins are celiac.
Lots of deserts over the years.
Fancy ones: Poached pears in creme anglaise.
Pavlova (per @WayOutWestMom ). There is also a high sugar version where the pavlova is then covered in caramelized sauce and almond slivers.
Baked Alaska.
Linzer torte (uses almond flour).
Less fancy but with a little bit of elegance: Ice cream with berries and cognac (or bourbon or tequila).
Berries with liqueur of some kind.
Simple: Cake made from Simple Mills Almond Flour Baking Mix, Vanilla Cupcake & Cake Mix - Gluten Free, Plant Based with berries (or strawberry shortcake from this).
Fruit crisp from gluten free rolled oats (Costco and TJ both sell).
Good cheeses, gluten free crackers and fruit.
Baked apples.
Just fyi, I just put a box of ghiradelli flourless chocolate cake mix in my online shopping cart. I use ghiradelli cocoa powder and chips when I make it from scratch, going to give it a try.
I like the Namaste cake mixes fyi. Especially their Spice cake, to which I add walnuts.
@coolguy40 I have a sense of humor but that post is an insult to people with celiac. My kid was seriously ill before it was finally diagnosed, and continues to be very ill with even minute amounts of cross-contamination. Educate yourself. What other health issue do you make fun of?
I don’t take it as an insult, but I just don’t think it’s very funny.
I ended up (Thanksgiving for us is this weekend) making a gluten free pumpkin roll and a gluten free clementine cake that my FOD son in law can also eat. Gluten free cupcakes have been ordered for the baby shower on Saturday. Thanks for all the suggestions. I have made notes for future bakes!
